This weeks throwdown was TACOS and Amber went all out with Tequila Lime Shrimp with home made salsa and guacamole and broccli slaw.The shrimp marinaded if tequila,beer, and various spices for about 2 hours before they went on the smoker. These were without a doubt the BEST tacos I have ever had. I did a breakfast taco for my entry,pig candy,fatty and an egg over easy with a little salsa to top it off.
PIG CANDY: Thick cut Bacon dusted with our rub and topped with light brown sugar and smoked til done.
FATTY: Jimmy Dean Sausage dusted with our rub wrapped in bacon dusted again then smoked til internal temp of 160
