Cornish Game Hens
This weeks throwdown was MINI FOWL so we did 4 Cornish Hens. Ayden and I did the prep work on the birds by rubbing them in Grillmates spices. We did twobirds in the Smokey Maple and two in Montreal Chicken. THe two maple birds got the beer butt treatment but we used Dr. Pepper instead of beer. I was doing a season burn on a new UDS so we threw some corn on it so Amber could make Black Bean and Corn Salsa. Ayden wanted to throw the birds on the New Braunfels offset, so I got it fired up with lump charcoal and split some pecan logs for the smoke. The hens rode the grill for about 2 1/2 hrs til the breast were at 165 then we pulled them. It was a beautiful day and we enjoyed it outside with the kids on the swingset and some cold beer doesn't get any better.
