Ambers first fattie
I have been making fatties for about 3 weeks know for people at work and for us at home. A fattie is any ground sausage in a roll that can be stuffed or left in original form wrapped in bacon or not that is smoked for about 3 hours at 250 degrees. Amber decided to try her hand at this fattie business the other night. She started with two rolls of Jimmy Dean mild sausage, she sauteed green onions,mushrooms and potatos in butter. She then took chorizo sausage,monterey jack cheese and layered it on the other sausage,next came the veggies and then rolled. She then wrapped it tightly in bacon and out to the smoker it went for a 3 hour smoke bath. It came off a golden brown and dying to be cut. I will say that was the best tasting fattie I have tasted so far. I have stuffed them with pepperoni and cheese and they were good but this one brought fatties to a new level and I can't wait to see what she comes up with next.
